On-Farm Pig Processing at Morganics Family Farm

Join Ali, Scott and the kids on Morganics Family Farm for a weekend of learning. Each year, 8-10 pigs are raised at Morganics and the product meant for sale must be processed in a USDA Inspected facility. However, the pigs kept to feed the family may be processed on the farm. The Morgans prefer to take full emotional, spiritual and culinary responsibility for the animals they consume on the farm.
This workshop will involve 2 separate days. Friday, the pigs will be dispatched and workshop hosts will discuss the various considerations for the humane taking of life as well as the essential first steps of the butchering process. Sunday, attendees will reconvene in the morning to work through the butchering process. This includes making the initial primal cuts, decisions around which cuts to make and where they come from as well as vacuum sealing and packaging considerations. Additional discussion on curing and further processing into sausage and bacon will be had.
